Meal Prepping for College


Sundays at my mother’s house have always been about two things, food, and God and thus ultimately the spiritual experience that is eating. A typical Sunday schedule at home looks something like this: wake up, go to church, go to the food market, make the food, eat, take a nap, eat, sleep. We cook only once on Sundays, and we don’t just make food, we make a food spread…a whole assortment of dishes. 

Now that I live alone and I is on a college budget without a college meal plan, I had to figure out a way of still making Sunday spreads happen without wasting food or breaking a bank. And so my Sunday spreads for one were born. I adopted my mother’s ritual to my college needs and made my Sunday schedule look like this: wake up, go to church, go to the food market, meal prep for the week, eat, reflect and plan for the week, nap, have a work session, eat, and then sleep. With this schedule, I manage to have both my usual food filled Sundays and a whole week worth of food. The awesome part is that during the week I only need to worry about making time to reheat and eat my food, so I save a lot of time too.

However, carrying and eating the same food all week can be tiring to the taste buds. My formula for creating a whole weeks worth of food without feeling like I am eating the same thing every day is to make one protein as a base for my meals and prep many different sides. This Sunday I am making my Sister’s famous and hella tasty Sweet Bell Pepper Chicken as my main dish, and some rice, chapati and steamed vegetables for sides. I will share my perfect coconut rice recipe and show you my quick veggie steaming method in the future. The chapati (roti) I absolutely did not make myself, I bought the butter rotis from Woolworths because I am such a lazy bum and chapatis take a whole year (maybe an exaggeration) to make 😂

At this point I should explain that this works for me because the meals I prepare are often for lunch. I make my breakfasts daily and have a whole document full of quick breakfast fixes that I shall be sharing in future recipe posts. For dinner, I often have salads and/or breakfast or lunch leftovers because I hate having a heavy meal at night. I also keep a fruits-full fridge and whole pantry of snacks and tea for all the times I simply want to chew on things after my tiny evening meal.
